Fresh sliced peaches and ricotta filling. You say it sounds like a naughty thing to have for breakfast? Well, the crepe batter was soaked overnight (to aid digestion) and was made from 100% fresh ground whole wheat flour. The ricotta filling was sweetened with xylitol, and one filled crepe has as much protein as a medium-sized egg. (Wow, that means I had equivalent of over a half dozen eggs for breakfast! baby will love it!)
The only drawback – having to hop up and down from my seat to flip the next crepe every 30 seconds. Some day I shall be Queen and someone else shall make me crepes for breakfast every morning…
Oh man, I love Crepes, we had a person bring in some for a demonstrative speech one time, they were fantastic! Hmm, now you make me want to actually cook in the morning.
