This is precisely what happened to me at lunch today. Tomorrow is shopping day. That means today is slim pickings day. I had spaghetti sauce and some noodles that I warmed up for Jeremy, but, alas – I could find nothing for myself ( I don’t eat pasta). Suddenly I remembered I did have an option! I took a baking potato (raw), peeled it, and grated it coarsely. I added an egg, a few tablespoons Parmesan cheese, and a dash each of salt and pepper. I heated my cast iron skillet with a puddle of bacon grease in the center, and fried myself some potato pancakes. They were delicious – the flavor was like McDonald’s French fries! The pancakes would have been good with just ketchup, or applesauce (a favorite of mine!) but I needed a bit of protein, too, so I spooned some of my meaty spaghetti sauce over each pancake, sprinkled on a little more Parmesan cheese, and sat down to enjoy my creation. It was pretty good for not having anything in the cupboard! ๐

You should see the biscuits I made tonight…talk about interesting. They are as flat as a pancake and turn quickly into crumbs when you touch them, but I like them. ๐
