The Lord knew I needed Rebecca this week! It has been humbling to have my guest working endlessly along with me in the kitchen, but I couldn’t have gotten all ready for the trip without her!

Rebecca is an expert onion chopper and her contacts protect her eyes from tears, so… I had her chop 15 today. What a friend.
Enchiladas from scratch – the filling, the sauce, and a fresh tortilla frying on my comal.
I made 32 tortillas – my biggest batch yet! And we used every one of them between the enchiladas for the trip, fajitas for dinner, and the last two for breakfast tomorrow.
After dinner Jesse helped Daddy pack the ski bag. He was all excited, doing the sign for ‘ski’. He doesn’t understand that we aren’t taking him this time! He will have a great time with his grandparents for the 4 days we’ll be gone, but I’m gonna miss my boy!
Olivia has great plans for the blog while I’m gone – as much as her computer time will allow, so stay tuned, and we’ll be back next week!
