a little something different…

In the never-ending quest for protein-rich snacks to tempt my appetite when pregnant, I tried something new tonight and thought it just might be worthy of a blog post…

Cinnamon Almond Popcorn
1/4 cup almond butter
1/4 cup honey
1/4 cup butter
3/4 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. vanilla

Combine in small sauce pot on low heat until melted.

Meanwhile, pop 1/4 popcorn, to make approx. 8 cups popped kernels.
Pour butter mixture over popcorn in a large bowl and stir to coat.

This is a variation on my usual Sunday night treat, Peanut Butter popcorn. I think it tastes quite gourmet. Now I have two versions to alternate between – yum!

Now I’m gonna go eat my popcorn and watch the movie with my hubby just fetched from his parent’s for us – “Saving Sarah Cain”.

    Whitney, thanks for the link – I’ll have to check it out!Aroura, I have to confess I was not impressed with the movie. Nothing objectionable, I just felt the script was rather lame, and the story line moved very slowly. The acting was actually pretty good for a low-budget production, and I thought the costumes were well done. Living in Amish community myself, I guess the most interesting thing was to see how well they portrayed the Amish aspect of the film (at least from my perspective.)Steph – My peanut butter popcorn recipe is equal parts peanut butter, butter, and honey – usually about 1/4 c. of each, to 1/4 cup popcorn (popped to make 8 cups kernels). Almond butter would be at a Health food store for sure, but you could probably find it at a grocery store that had a health food section, like Wegmans.

    What is your recipie for peanut butter popcorn??Where would you buy almond butter??I must say both ideas sound pleasing to my very picky tummy.I might just like them!!

    These sound really good! I am a big cinnamon fan so anything (almost) with cinnamon sounds good to me! ๐Ÿ™‚ I'll have to try these sometime.BTW, what did you think of “Saving Sarah Cain”? I've read the book and I really liked it, I haven't seen the movie though.Aurora ( from S&S)

    I’ve never added cinnamon before, but I’m sure it would be good with peanutbutter. I just adjusted the recipe for a little – I realized there was too much cinnamon and I had forgot to make note of the dash of vanilla I’d added…

    mmmm.. that sounds really good right now! When you make your peanut butter version, do you still include the cinnamon?Thanks again for the coffee this morning, it definitely hit the spot considering my lack of rest, lol.
