This is the cheesecake that Anja made for my birthday. If you are a cheesecake connoisseur this recipe may not impress you. BUT – if you have been on a no-sugar, no-flour diet for 4 months, and are desperate to have something for your birthday that doesn’t put you on a guilt trip – you’ll love it!
Cheesecake
2 eggs plus 2 yolks
16 oz (2 cups) cream cheese
8 oz (1 cup) plain yogurt
1 tbsp. vanilla 1 tbsp lemon juice
1/2 c. honey
beat the eggs and yolks until smooth, add honey. Mix well with vanilla and lemon juice. Combine cream cheese and yogurt. Prepare crust and place in 9″ glass pie pan. Pour in cheesecake and bake for 40 min. at 310 degrees. Refrigerate before eating.
For the crust, Anja put 2 cups almonds in a blender until they were very fine crumbs, added 1/3 c. melted butter and 2 Tbsp. honey and patted it along the bottom and sides of the cheesecake pan. Next time we want to try pecans – the almonds were a bit bitter. Maybe more honey in the crust…
Now that I have found a dessert I can make that doesn’t have any ingredients I can’t have, I plan on making it more often – maybe next time I will try to make it chocolate flavor (ohhh, for a guilt-free chocolate fix!!!)
Can you have fruit? Apples or strawberries? Is dark chocolate allowed? You might try some fondue, if you can.
