Cheap and Healthy Dates

 I’m packing for a little getaway – Jeremy and I are going towards Jamestown and somewhere in PA for our anniversary this weekend. (#5!!!). We’ll leave tomorrow morning, drop the kids at Grandma’s (taking the baby with us), run some errands, then show up at the Reg Lenna Civic Center to volunteer at the Tenth Avenue North Concert tomorrow night.

(We have found that volunteering together is a great, cheap date! Get’s you free into the concert, and you usually get to see most of the show in between your duties!)

We’ll stay in Jamestown that night, and then meander down toward PA through the foothills and peak fall color. We’re staying somewhere in PA that night, and will make our way back home on Sunday.

Since I had time and stuff in the fridge (a rare combination, I’m telling you) I am putting together meals for Friday so we can save some money on our little trip. The leftover taco meat from supper went into individual salads for tomorrow, with sour cream, salsa, and chips on the side. This is an easy meal to pack to save money and eat healthier when you’re on the road.

 Mine has avocado slices, tomatoes, raw milk cheddar cheese, shredded lettuce, and taco meat seasoned with my own taco mix. Jeremy’s has lettuce, cheese, and meat. 🙂

Save money and avoid all the yucky additives in the packets from the store and make your own…

(This recipe kindly passed on to me from Rachel‘s mom, with just a few of my own variations.)

Taco Seasoning
1 cup onion flakes
1/4 c. salt
1/4 c. chili powder
1/4 c. cornmeal or corn starch
3 Tbsp. crushed red pepper
3 Tbsp. garlic powder
3 Tbsp. cumin
3 Tbsp. oregano
2 Tbsp. sucanat or raw sugar
Mix and keep in an air-tight container (I use a recylcled parmesean cheese container). Use one Tbsp. per Lb. of meat, or to taste. I sprinkle it over the meat when it is almost all brown, stir it in till it starts to cake up with the meat, then add 1/2 cup water. This will ensure your meat stays nice and moist, and creates a nice gravy with the seasonings.

    Thanks for the recipe, I bet it's cheaper as well as better for you than the store-bought packets. Have a great anniversary trip, my hubby and I just had our 21st!
