I know it doesn’t sound excited, but if you’re addicted to oats and raisins (like my kids), you’ll wanna try this simple recipe for breakfast. Simple but yummy. Because it’s made from oats and raisins. Did I already mention that? Sorry.
If you don’t like oatmeal, stay far away -‘ cause the bread is moist and almost gooey, just like a spoonful of oatmeal.
This is a recipe from my childhood. One bite this morning and I was 10 again, wolfing down two slices before racing out to climb trees in the backyard. The next bite, I was 14, proud of making breakfast for my family (I learned to cook late).
This is such a simple meal, it’s great for beginning cooks. Put your little one’s aprons on and let them help you mix this together. Lots of simple measuring and easy stirring.
1 cup flour (I used whole wheat)
1 c. oats
1/4 sugar (I used sucanat)
1/2 c. raisins
1/2 tsp salt
1 Tbsp. baking powder
Mix dry ingredients together.
3 Tbsp. butter
1 cup milk
Stir the wet ingredients into the dry.
Bake in a greased 8×8 pan at 425 for 20 min, or until top crust bounces back when you give it a little poke.
Slice and enjoy. And watch your plate, or someone may steal your raisins right out from under your nose!
